I have seen several versions of this type of recipe floating around and I decided to make my own version.
1 chicken breast from a free ranged chicken(left over bits from other meals are acceptable)
1/2 cup of corn
1/2 cup black beans
1/2 cup of veggies such as green onions or bell peppers (feel free to get creative here/use what you have.)
1/4 cup crushed tortilla chips.
Mayonnaise or yogurt to taste (4 tablespoons approximately)
Directions: Cook the chicken and set aside in a medium sized bowl. Cut avocados in half and remove pits. Toss the pits in the compost. Set the avocados aside. In the bowl that contains the chicken combine corn, black beans, and your choice of veggies. Add mayonnaise or yogurt to the mix. Four tablespoons should be about right. Using a spoon scoop the mixture into the hollows of the avocado. Crush up tortilla chips and sprinkle them on top.

Make it vegetarian: Omit the chicken/add tofu.
Make it vegan: Use vegan mayonnaise, omit the chicken/use tofu
